Every month Messina Hof hosts a Cooking Party, a demonstration focusing on a specific cuisine or technique. If you're a beginner, we've got you covered with beginner lessons and if you're already quite the chef you'll appreciate the huge selection of information on spices, cuts of meat, tools and more. Each guest will receive a recipe booklet to take home AND will have a chance to register to win awesome culinary door prizes.
NOVEMBER COOKING PARTY: HOLIDAY FARE
This month we will be featuring festive dishes for the holidays. Messina Hof wine will be featured in the dish as always.
1st Course - Turkey Mousseline Appetizer
Paired with Private Reserve Orange Muscat 2017
Ground turkey laced with dried cranberries rolled in crushed pecans. Rolled into a cylinder and poached. Chilled, sliced served with a warm cranberry and Orange Muscat jam.
2nd Course - Sweet Potato and Pork Wellington
Paired with Private Reserve Cabernet Franc 2016
A take on the classic wellington with a twist. Pork loin rubbed down with holiday spices, topped with whipped sweet potatoes then rolled in a puff pastry casing. Baked to golden brown. Served with veal demi-glace and accompanied by almond green beans.
3rd Course - Individual Pumpkin Cheesecakes
Paired with Private Reserve Papa Paulo Port 2016
All the warm feelings of Thanksgiving without the caloric guilt. Traditional cheesecake blended with pumpkin and spices as well as a touch of Tawny Port
