Africaine Sauce


Recently a friend shared with me a sauce called Africaine. 

We recreated it by blending Espagnole sauce, diced tomato, chopped onions, chopped bell pepper, salt, garlic, Pinot Girgio, basil, parsley, bay leaf, and thyme. 

Our version reminded me of a cross between Cajun and Italian!  I served it over pasta with our TexZin.
