Changing Seasons with Messina Hof

As the season changes and the vineyard leaves turn with Fall, our team at Messina Hof continues to process grapes from this year’s Harvest. We are currently pressing tanks of Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec, and Mourvèdre. Pressing grapes occurs after the grapes are destemmed and crushed, creating “must” (a combination of juice, skins, and seeds). The juice from the pressed must will then get pumped into tanks and labeled.Where the winemaking continues with fermentation and aging.  In the vineyard, the vines will convert light to energy until enough is stored and the leaves change to beautiful shades of green and yellow. As winter approaches the vineyard will go into dormancy until Spring.
