Most chocolate chip cookie recipes are usually too sweet to enjoy with a big red. 

One technique you can use to make any chocolate chip cookie pair successfully with a big dry red wine is to sprinkle the cookie sheet with a fine dusting of cloves. 

Take ground cloves and grind to a finer dust. 

Sift the dust very lightly on the greased baking sheets before scooping the cookie dough onto the sheets. 

The resulting flavor will add a heavier weight and spice to the cookies which will pair with the heavier wines.
