George Bush Cabernet Sauvignon with Cookies and Cream Drops

The George Bush Cabernet Sauvignon was created especially for the 10th anniversary of the George Bush Library. Double Barrel aged with a wonderful blend of Cabernet Sauvignon and Merlot. This wine has complex, spicy tones of pepper, blackberry and vanilla. Our special aging process provides rich vanilla flavors, balanced with great fruit and a medium to full-body taste and mouth feel.

The Hershey’s Cookie and Cream Drops enhance the mellowness of this older vintage wine. Cabernet Sauvignon is a workhorse grape. It produces muscular wines with structure and backbone. In making CS we often blend Merlot to soften and relax the “6-pack” in the wine. Cookies and Cream acts in the same way. The chocolate and grainy type crunch from the cookies gives the candy just enough flavor weight to compliment the wine while the cream softens the tannins and makes the wine creamier or more relaxed in the mouth.  It seems to have a bit of salt which also softens tannins. Chocolate kisses do the same thing but this pairing was much more interesting.
