Harvest memories are wonderful and we love it when guests share their favorite moments. Dana wrote: “My family and I stayed at Messina Hof during Harvest Weekend on July 30-Aug 1. During the lunch on Saturday we were served a squash/zucchini dish. It was wonderful and my husband loved it. I was wondering if I could get the recipe for that dish…… We had a wonderful time and can’t wait to visit again. Thank you for all the treasured memories that were made.”
 
Each harvest we enjoy a great luncheon feast of wonderful foods including our signature Treberwurst, chicken and pasta, garlic hummus, salads, Texas cheeses, fresh vegetables and fruit, soup, and a spread of desserts. (of course, the chocolate ones are my favorite!) Some of our guests requested the recipe of the squash that we served this year. Good news, because I am all about people eating more vegetables! Here is the recipe for this year’s squash dish:
 
Messina Hof Vineyard Squash
 
With a Roasting Pan, coat the entire pan with grapeseed or canola oil.
Cut the squash and zucchini into 1/8 pieces
Then place the entire cut pieces into the roasting pan and make sure they are all coated in the oil
Next, cut butter into small chunks and place over the squash and zucchini in the roasting pan
Sprinkle salt, pepper and Montreal seasoning
Roast in the oven at 350 degrees for about 30 minutes
