Let’s Talk Turkey – Asian Plum Sauce

To give a sweeter taste to a salt cured or blackened turkey, you should consider using the Asian Plum Sauce recipe. This sauce brings a unique flavor to the traditional holiday turkey. An excellent wine pairing would be the Messina Hof Angel Late Harvest Riesling.
-1 cup sugar
-½ cup water
-A pinch of salt
-1 Tbsp. red bell pepper, diced very finely
-¼ cup fresh ginger diced very fine
-1 Tbsp. fresh garlic minced
-2 star anise
-1 cup plum jelly or preserves
-2 T. Angel Late Harvest Rieslings
Combine sugar and water. Bring to a boil; add salt. Let boil for 5 minutes. Add bell pepper, ginger, garlic, and star anise. Simmer for another 3-4 min. remove from heat. Add jelly and wine. Remove from heat and let cool.
