Do you remember the Confederate House restaurant in Houston, Texas? In our early years, we had the opportunity to do several very creative dinners with Bill Edge at the Confederate House. The restaurant was a Houston institution. When the Confederate House closed, we followed Bill to Simposio’s which focused on Northern Italian Cuisine. Simposio even won Esquire’s Magazine’s best Italian Restaurant. Chef Alberto Baffoni and Bill Edge did a great job with this menu. From my own personal notes, go lightly on the risotto because it is so creamy and easy to eat, it will fill you up. The Portobello mushroom dish was perfect balanced with the Cabernet Sauvignon. Port by itself is a dessert. This wine with cheese is a perfect ending to a wonderful meal.
