RECIPE for the SUN-DRIED TOMATO BUTTER
1/2 lb. of unsalted butter, softened
1/4 cup of sun-dried tomato paste
1 tablespoon of parsley, minced
1/2 teaspoon of garlic, minced
1 tablespoon of Messina Hof’s Artist Series Primitivo
A pinch of salt & pepper
Soften butter for two hours at room temperature. Finely chop your parsley and garlic using a chef’s knife. Stir all ingredients, except salt and pepper, together in a mixing bowl, being sure to incorporate well. Add salt and pepper slowly, to taste. Center on a sheet of parchment paper and roll into a log, using a sheet pan to tighten and distribute evenly, then twist the ends to close. This butter will last 4 weeks in the refrigerator.
